Almond Crusted Chicken

When my husband asked me to make an Almond Crusted Chicken my immediate thought was “ugh those almonds are going to be a lot of points!” Of course, as with anything, in moderation they are not that bad.

Ingredients: Per Serving

  • 4 oz chicken breast
  • 1/2 oz skinless almonds finely chopped
  • 1 Tbsp Panko bread crumbs seasoned with salt and pepper
  • Olive oil cooking spray

Preheat oven to 350. In shallow dish combine almonds and bread crumbs. Coat chicken with almond mixture and set aside. If you are counting WW+pts do each piece seperate in order to get an accurate measurement. If not then multiply all ingredients by the amount of chicken you are making. Heat skillet on Med – High heat and spray with olive oil cooking spray. When pan is hot place chicken in pan and toast almonds on each side. Be careful not to get the pan too hot or your almonds will burn. Feel free to top the chiken with the extra almond mixture…if we are counting it we are eating it!

After toasting the chicken place on a cookie sheet and finish cooking in the oven. If possible use a cooling rack on top of your pan to ensure you get a nice crispy texture all around.  When chicken is fully cooked plate it and enjoy. Each serving = 6 WW+pts

Any vegetable or rice would be a good side…depending on how many points you have to spare. I roasted zucchini, yellow squash, and onion seasoned with salt and pepper.
